Make these delicious cookies with our original chickpea butter. The whole family will love them! They are nut free and gluten free. We also offer substitutions in the recipe for a vegan friendly option!
1/2 cup butter (at room temperature is best) or vegan butter
1/2 cup YES, PEAS! ORIGINAL CHICKPEA BUTTER (or feel free to use our Maple Cinnamon or Chocolate Butter!)
1 cup sugar (or use a combination of white sugar, brown sugar, or coconut sugar)
1 egg (or 1 flax "egg" - to substitute 1 egg for a vegan friendly option: in a small bowl, combine 1 tbsp. ground flaxseeds + 2.5 tbsp. water, let it sit for 5 minutes and then add into recipe in place of egg).
1 1/2 cups flour or gluten free flour (we recommend Bob's Red Mill 1-to-1 baking flour).
1/2 tsp. baking powder
1/3 tsp. salt
1/2 cup chocolate chips (we recommend Camino or Enjoy Life brands).
Preheat oven to 350 degrees F
Line 2 trays with parchment paper
Beat butter and CHICKPEA BUTTER until smooth
Add in sugar and egg
Add in flour, baking powder, and salt (make sure not to over mix at this point)
Add in chocolate chips, leaving a few aside to top cookies with
Roll batter into balls (makes about 15-18 balls)
Flatten the balls slightly with a fork
Press remaining chocolate chips into the tops of the cookies
Bake for 15-18 minutes (depends on your oven). Check on them at about 12 minutes, and continue checking until they are golden brown
Remove from oven and let cool for 10 minutes
